So what's stopping omega from just undoing this as they're attempting this whole thing, anyways? She can't tell what they're saying to each other thanks to ether communication, but she can still tell everyone's moving to a single spot and just going "no" and separating them again.

Because they're planning to stop her and have everything go back to normal. Idk maybe she's the type of villain who will let it happen out of cockiness, but so far it seems like if she wanted to stop this she could thanos snap jones to the other side of the court anytime annie got within spitting distance of her.
1) She can't do that. Neither Omega nor Jones seem to be able to teleport through the distortion like most normal people can.
2) Omega would not have any problem at all with Annie restoring normalcy to life in the distortion. Quite the opposite, in fact, this is very much in line with her motivations.
3) Omega isn't a villain and hasn't done anything wrong so far. Omega's motivations are very straight-forward and should be fairly clear: She doesn't want the distortion to end and she wants to observe Annie.

I don't know, actually! I would say that makes Anja less attractive for her. Anja is 'taken' as it were. And even if that wasn't an issue for Annie, Anja is VERY hands-off. I'm not sure Anja would 'do it for her' as much as even Jones does, who, at least as an instructor, was pretty instrumental in forming Annie into who she is now. Despite her stoic and largely uncaring nature, she's been far more of a mother figure for Annie than anyone else.
