I mean, in China he was able to do as many cuts and takes as he wanted to make the perfect scene and even when he was the fight scene choreographer in America they'd only let him film like three takes and then say "good enough" but Jackie wasn't a "good enough" guy he's a perfectionist and no American made movie let him get the perfect shots he wanted. This is the most prevalent in Shanghai Noon and its sequel's fight scenes. They're clearly choreographed by Jackie Chan, but there's so many cuts and edits that are used to hide bad takes instead of just getting the one good take.
