The later seasons of YJ have more gore because the series wanted to be more "adult." In S3, there was Cyborg's origin, the murders of the royal family and Halo getting horrifically maimed multiple times because the writers couldn't think of a more creative way to show that she has regeneration powers.

Because YJ is cartoon made for kids that aired on basic cable whereas Invincible is made for consumerist manchildren and aired on the largest streaming platform in the world. The latter will always reach a wider, more obsessive audience. Even so, Invincible isn't a cultural phenomenon or anything. It garners some attention while it airs but then drops off dramatically once the season ends.
It was never as successful as BTAS or Teen Titans but it was one of DC's more popular series. It's more popular than similar shows like MAWS, which despite having far worse viewership is allowed multiple seasons and spinoffs.

It's cheaper to animate two characters sitting at a table talking (with just their mouths moving or shown from the back so you don't have to animate anything at all) about their relationships than to animate a fight scene that may need a lot of chorography and different angles.

Most likely because those characters are going to die and there's no point in spending a lot of time and effort designing cool suits for a character who isn't going to be around long anyway.
