Fire Nation probably wouldn't react well if Zuko made Suki beyond a concubine and married her. Not only would he marry an Earth kingdom woman which would be scandalous. He would also be marrying an Earth kingdom commoner and not nobility which would probably be more scandalous than him marrying an Earth kingdom woman.

And what are they going to do about it if they didn't rebel against Zuko snatching defeat from the jaws of victory? All the other potential Fire Lords with legitmacy support Zuko, are in jail without their bending, or is insane.

It actually made sense from Zuko's POV since Zuko's guard was either not loyal to him or grossly incompetent and historically foreign guards are a thing in real life. It largely doesn't make sense from the Kyoshi's Warriors' side since the Earth Kingdom is in shambles and needs their help more than Zuko does, though you could argue that they view protecting Zuko as more important since him getting deposed of or dying would likely to the war restarting, or at least international chaos.

It's a mix of the comics having to maintain continuity with Korra, them wanting to milk certain storylines like Azula's final fate to maximize engagement, the sudden creation of Avatar Studios not allowing the comics to have any substantive stories anymore, and the original writing team no longer being there and no one being able to or willing to push back against Bryke's worst impulses.

It's capitalism. No worthwhile property can ever have a meaningful conclusion and end on its own terms anymore. You have to milk them for as much content as you can. It's why, for example, 616 Spider-Man never had kids and eventually had his marriage retconned. If 616 Peter naturally progressed like he had for most of his history, then eventually his story would end, and Marvel doesn't want to happen since it is very unlikely they'll ever create a character as beloved as Peter.

But as I explained earlier, ATLA isn't realistic when it comes to sex and royalty/nobles. If it was, then Ozai, for example, would have quickly remarried after banishing Ursa, made a bunch of legitimate heirs, and probably had several mistresses/concubines and illegitimate children. Instead, he remains single and chaste and fails to make any new heirs, even though he essentially banished his oldest male heir for life and allows his presumptive heir to be in constant life or death situation. In another example, they wouldn't have gotten rid of that planned arranged marriage arc for Azula and a significant portion of her comics arc would be her and/or Zuko dealing with suitors who want to take advantage of a mentally ill princess and make heirs with her.
